About Us

Quatro's Deep Pan Pizza had its start in 1975 after four guys from Chicago (Uno, Dos, Tres …get it?) opened a pizza joint in an old doughnut bakery. The four guys knew they had a hit on their hands right after opening, but lacking backgrounds in food service and business management, they found themselves going bankrupt within a year.

Enter Steve Payne, an eager 21-year-old college student, who had cut his teeth at the Golden Bear Pancake House. He bought Quatro's in early 1976, but in honor of the original owners he kept the name. Steve had a passion for restaurant management and soon set about turning his new venture into a success.

The first thing Steve did was renovate the interior. At the time the pizzas were still being baked in the same ovens used by the doughnut shop. An old icebox served as a beer cooler. The restaurant did not even have bathrooms! For the convenience of his customers, Steve bought space next door and doubled the size of the dining area.

During his first year in business, Steve found that his flow of clientele depended on when nearby Southern Illinois University was in session. When classes let out for summer break, business dried up.

Fortunately for him, it was 1976, and a large group of Americans was celebrating the Bicentennial by bicycling across the country. Since Carbondale was a designated rest stop, Quatro's soon welcomed a steady influx of customers. That summer over 2000 hungry and thirsty cyclists from all over the country came in for pizza and beer.

Many of these enthusiasts returned home to tell family and friends about the great pizza they had eaten in Southern Illinois. By the time classes began in the fall, Quatro's was on its way to becoming an established fixture in Carbondale. Over 45 years later, Steve now serves pizza to the grandkids of his original customers!

What measures are in place for the pandemic?

Aside from our usual strict standards of cleanliness, we have several measures in place. Capacity is still reduced from pre-pandemic. Contact-Free Deliveries and Curbside Pickups are available by request. We follow all health department recommendations.

What is Curbside Pickup?

We are currently requesting all pickup orders to remain curbside in the interest of reducing queueing in house. That means you will come to the North side parking lot of Quatro's off of S. University Ave. That is the back side of the building between Quatro's and Laundry World. There are numbered spots on the left. Call and let us know your name and what spot you are in, and we will bring your order to you! If you would like your curbside order to be contact-free, let us know when you call. We will happily put your order in your trunk, hatchback, or pickup bed.

How far do you deliver?

For insurance reasons we cannot deliver outside of Carbondale. If you are unsure if your address qualifies as a Carbondale address, give us a call. Otherwise, we do have some well-lit meeting points at the following locations:

East on Route 13: The Marketplace Shell near Reed Station Road, or the SIH Office (formerly known as Vitamin World).

West on Route 13: Parking lot of CVS.

North on Route 51: Dillinger Road.

South on Route 51: Makanda Dollar General.

South on Giant City Road: Giant City Plaza. This is a small strip with Giant City Heating & Cooling near Park St.

Union Hill area: We do not deliver down Union Hill, but will meet at the Union Hill and Pleasant Hill intersection (SIU Farm).

Does anybody else deliver your pizzas?

We have partnered with Grubhub and Doordash who can deliver a greater radius than our drivers. Please note that when using a third-party service for delivery we cannot guarantee the delivery time or product satisfaction once it has left the store.

I need to cook my half-baked pizza...What do I do?

Bake at 425 degrees for 10-20 minutes until the cheese is golden-brown. Sausage and Ground beef must reach an internal temperature of 165 degrees.

Do you have gluten-free crust?

At this time, we do not offer gluten-free options. We make our pizza dough in-house. Due to the small size of our kitchen and the homemade dough we would not feel comfortable guaranteeing a gluten free product.

How long will my order take?

Our pizzas are made to order. They require at least 20 minutes. During peak times, waits for pickup could be as long as 45 minutes or longer and an hour or more for delivery. Call the store for the best estimate. Sandwiches and salads generally require less time if you are in a hurry.

Do you have single slices?

We sell single slices and lunch combos (slice, salad, and drink) Monday through Friday 11AM-1PM in 6 varieties: Challenge, Pepperoni, Sausage, Onion/Green Pepper, Mushroom, and Cheese.
